These are so wonderful! I modified this recipe- http://allrecipes.com/Recipe/good-old-fashioned-pancakes/Detail.aspx in order to make it a bit healthier. I may keep trying to tweak it to make less calories (maybe cut down the butter a bit more) but this is something I'd save calories to eat on a special day!! Make sure you DON'T use baking soda on accident...didn't go over so well!!!

Recipe Ingredients for Über Yummy Pancakes

3/4 cup whole wheat flour
3/4 cup all purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 teaspoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons I can't believe it's not butter, melted

Recipe Directions for Über Yummy Pancakes

  1. In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.

  2. Heat a lightly oiled (I don't do this part, but you could use a little PAM) griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
