A nice mix of brown rice, white rice, and red quinoa, cooked in light coconut milk and low-sodium fat free chicken broth. Keeps well in the fridge, good to make ahead for bento lunches.

Recipe Ingredients for Bento rice

1 c lite coconut milk
3/4 c Broth
2 1/4 c water
1 c Rice, Brown, Medium-grain
1 c Rice, White, Medium-grain
1/4 c Quinoa

Recipe Directions for Bento rice

Place all ingredients in rice cooker, and cook until done. Be sure to let rice cool before storing in fridge.
