3 tbsp chili powder
15 ounce tomatoes
1/3 cup lime juice
1 onion

  1. roast whole chicken coated with olive oil and seasoned with ancho chili powdder in roasting pan

  2. sautee onions with garlic, chili powder, olive oil, add diced tomatoes

  3. add pan drippings from chicken

  4. add chicken broth and rice

  5. add chicken

  6. add cilantro and lime
