Recipe Ingredients for bell pepper stew

1/3 cup olive oil
6 onions
28 oz canned diced tomatoes
2 red bell peppers
2 yellow bell peppers
2 green bell peppers
1/3 cup white wine vinegar
1 cup black olives
1/8 tsp salt

Recipe Directions for bell pepper stew

  1. Heat oil. Add onion and saute 3-4 min.

  2. Add tomatoes and bell peppers and mix well. Simer until peppers are tender and sauce has reduced - 30 min.

  3. Stir in vinegar. Simmer until evaporated - 5 min. Add olives and season with salt. Mix well and simmer 5 min.
