Easy rice and vegetable recipe to reheat and serve throughout the week

Recipe Ingredients for Bell Pepper & Mushroom Brown Rice

2 cups brown rice
4 1/2 cups water
8 g Chicken Bouillon Bouillon Cubes
4 tbsp olive oil
24 oz baby bella mushrooms
1 medium red bell pepper
1 medium yellow bell pepper
1 medium orange bell pepper
1 medium onion
30 cloves garlic

Recipe Directions for Bell Pepper & Mushroom Brown Rice

  1. Sautee diced garlic and onions.

  2. Add diced mushrooms and bell peppers. Sautee till soft. Add any herbs and spices.

  3. Add brown rice and sitr for 1-2 minutes.

  4. Dissolved bouillon cubes in water and add to rice and vegetables.

  5. Bring to a boil.

  6. Cover and simmer for 45 minutes.

  7. Remove from heat and let sit covered for 10-15 more minutes.

  8. Stir and serve
