An easier, faster version to stuffed bell peppers. Use what ever color peppers you wish. I just used what I had.

Recipe Ingredients for Bell Pepper Hotdish

5 cup, chopped Peppers, Sweet, Green
1 medium Orange Hothouse Bell Pepper
2 cup Premium Rice
3 large whole (3" dia) Tomatoes, Red, Ripe
15 oz Soup, Tomato
17 oz Beef, Ground, 85% Lean Meat / 15% Fat, Crumbles
18 tbsp Ketchup
1 small Onions
1 clove Garlic
2 tbsp Olive Oil

Recipe Directions for Bell Pepper Hotdish

Blanch peppers. Add oil and crushed garlic to pan; brown beef. Add chopped vegetables. Simmer for up to 10 minutes. Add tomato soup and ketchup. Add cooked rice. Simmer until heated through. Season as desired.
