Easy dish of bell peppers and whole wheat pasta. Reduce olive oil and cheese to lower caloric value

Recipe Ingredients for bell pepper bake

2 cup Spaghetti, Whole-wheat, Cooked
1 pepper, large (3-3/4" long, 3" dia) Peppers, Sweet, Yellow
1 cup, chopped Peppers, Sweet, Red
1 medium Orange Hothouse Bell Pepper
1 cup, sliced Onions
2 clove Garlic
8 oz Tomato Sauce No Salt Added
1 cup Ricotta, Part Skim Milk Cheese
1 medium Egg, Whole
1 tbsp Olive Oil
2 serving cheese, parmesan grated (2 T)

Recipe Directions for bell pepper bake

  1. julienne the peppers

  2. slice onion

  3. use a garlic press to mince the garlic

  4. saute in 1 T olive oil

  5. cook spaghetti

  6. mix ricotta, egg and 1T parmesan

  7. Layer ingredients in a baking dish starting with 1/2 of the tomato sauce, peppers, spaghetti, the rest of the tomato sauce and finish with the ricotta cheese mixture

  8. bake @ 375 for 30-40 minutes
