Recipe Ingredients for Belgian Mashed Potatoes

12 potatoes
12 oz butter
2 eggs
1/2 cup milk
1/8 teaspoon white pepper
1/8 teaspoon salt
1/8 teaspoon paprika
1/4 cup bread crumbs

Recipe Directions for Belgian Mashed Potatoes

  1. Peal potatoes and cut into cubes. Pressure cook until firm but not mushy (about 2.5 minutes. Drain and return to pressure pan. Mash or pass through a ricer.

  2. Add the 8 oz of butter cut into pieces and the 2 yokes from the eggs and mix into the potatoes.

  3. Add warmed milk a little at a time until you get the desired consistency while mixing.

  4. Add paprika and white pepper. Mix.

  5. Salt to taste.

  6. Put mashed potatoes into a casserole dish and even out. Sprinkle bread crumbs on top and put remaining butter as patties on it and brown top off under the oven broiler.
