Dill crepe in the form of a beggars purse (hence the name). Inside the beggars purse is salmon, a dollop of sour cream, and 3 capers.

Recipe Ingredients for Beggin' for Some Salmon

2 whole eggs
2 egg yolks
4 fl oz water
6 fl oz fat free milk
1/3 tsp salt
4 3/5 oz flour
1 3/5 oz butter, melted
1 oz smoked salmon
1 tsp capers
1 pinch fresh dill
1 tsp sour cream
1 pinch pepper

Recipe Directions for Beggin' for Some Salmon

  1. Whisk together the eggs, egg yolks, water and milk. Add the salt, pepper and flour; whisk together. Stir in the melted butter. Add in dill. Cover and set aside to rest for atleast 10 minutes before cooking.

  2. Heat a small saute or crepe pan; brush lightly with clarified butter. Pour in 1 - 1 1/2 ounces of batter; swirl to coat the bottom of the pan evenly.

  3. Cook the crepe until set and light brown, approximately 30 seconds. Flip it over and cook a few seconds longer. Remove from the pan. Repeat this process until all the batter is used.

  4. Cooked crepes may be used immediately or covered and held briefly in a warm oven. Crepes an also be wrapped well in plastic wrap and refrigerated for 2 to 3 days or frozen for several weeks.
