This is a lovely side dish to any meat or on its own. 5 cups grated cooked beets 1/4 cup salted butter 2 tbsp flour 3 tbs cider vinegar or to taste sugar to tase salt to taste

Recipe Ingredients for Beets, with Roux

5 cup slices Beets
20.4 grams Butter Salted
0.25 cup Wheat Flour, White, All-purpose, Enriched, Bleached
3 Tablespoon Cider Vinegar

Recipe Directions for Beets, with Roux

  1. Grate 5 cups cooked beets

  2. Melt butter in pan till bubbles

  3. Put flour into butter and stir till flour is very dark brown and is just staring to smoke lightly. The consistancy of the rue should be loose and more liquid than firm.

  4. Put beets into rue and mix

  5. Add a bit of water to loosen the mixture a bit and then add the vinegar.

  6. Cook for about 5 minutes on med heat.
