Substituted Port for the stout below and greatly reduced amounts called for in recipe. Baked beets rather than boiling. Delicious.

Recipe Ingredients for Beets with Port & Sauteed Beet Greens

2 beets+2"+dia,+sphere beets
1/4 lb Beet Greens
3 tablespoon port wine
1 tablespoon balsamic vinegar
2 tbsp unsalted butter

Recipe Directions for Beets with Port & Sauteed Beet Greens

  1. Bake beets, wrapped in foil, at 450 until they are tender. Under cold running water slip off and discard beet skins and stems.

  2. In a skillet bring to a boil the port wine and vinegar and whisk in 1 tablespoon of the butter. Stir in the beets, quartered, add the salt and pepper to taste, and keep the beets warm, covered.

  3. In a large skillet heat the remaining tablespoon butter over moderately high heat until the foam subsides, in it sauté the reserved beet greens, stirring, for 5 minutes, or until they are tender, and stir in the salt and pepper to taste.

  4. Arrange the greens around the edge of a platter and mound the beets in the center.
