Recipe Ingredients for Beetroot and Rosemary Soup

318 grams Beets
1 Cube Stock Cubes
1 medium (2-1/2" dia) Onions
4 serving Tomatoes, Crushed, Canned
2 clove Garlic
115 grams Cream, Sour, Cultured
1 tbsp Extra Virgin Olive Oil

Recipe Directions for Beetroot and Rosemary Soup

Roast beetroot until soft, peel and set aside. Saute onion and garlic in olive oil until soft and translucent. Add chopped up beetroot, rosemary and stock. SImmer for 10 minutes. Blend then add salt and pepper to taste. Before serving stir in sour cream and serve hot.
