Healthy and delicious summer treat

Recipe Ingredients for Beetroot, pumpkin and chickpea salad

600 g beets
2 teaspoons olive oil
2 garlic cloves, crushed
500 g pumpkin
150 g chickpeas, canned
30 ml olive oil
30 ml balsamic vinegar
100 g baby spinach leaves
100 g feta cheese

Recipe Directions for Beetroot, pumpkin and chickpea salad

  1. Bake beetroot mixed with gralic and olive oil for 10 mintes

  2. Add pumpkin to the baking dish and bake for a further 20 minutes

  3. Combine chickpeas oil and vinegar in a large jug

  4. Place beetroot, pumpkin, spinach and chickpea mix in a large bowl and toss gently

  5. Serve topped with crumbled feta
