beet brownies (half the fat of reg brownies but all the taste)

Recipe Ingredients for beetroot brownies

400 grams Beets
100 grams Unsalted Butter
200 grams Swiss, 70% Cocoa
250 grams Sugar Light Brown
3 large Egg, White
100 grams Gold Medal All Purpose Flour
25 grams Cocoa, Dry Powder, Unsweetened

Recipe Directions for beetroot brownies

  1. chop beets and cook in microwave for 12 mins with a bit of water

  2. heat oven to 350

  3. drain beets, put in food processor with chopped butter and chopped chocolate and vanilla - get as smooth as possible

  4. whisk sugar and eggs til frothy, fold in beet mxiture, sift in flour and cocoa folding carefully.

  5. Pour into tin and cook for 25+ mins centre should quiver a bit when you take it out.
