Sweet and savory Italian style salad

Recipe Ingredients for Beet Salad

4 beets
1 cup Beet Greens
1/4 cup shallot
2 tbsp capers
1 tbsp olive oil
1 tsp balsamic vinegar
1 cup cannellini beans
1/8 tsp salt

Recipe Directions for Beet Salad

  1. Separate beet greens, removing about 3 inches of stalks.

  2. Blanch beets, transfer to chilled water, then peel and julienne.

  3. Steam beet greens for about 3 minutes, rinse with cold water, squeeze out liquid, then chop.

  4. Finely chop the shallot.

  5. Combine beets, greens, shallot, and caper.

  6. Season with salt, vinegar, and olive oil.

  7. Sprinkle with beans then serve.
