Recipe Ingredients for Beet Salad with Oranges & Fennel

6 medium beet, raw
2 cups oranges, raw, sliced
1/2 cup fennel, bulb - raw, trimmed, quartered, cored and cut into paper-thin strips
1/4 cup fresh mint, chopped
1/4 cup fresh parsley, Italian, chopped
1/4 cup hazelnuts, toasted, husked & halved
2 tbsp shallot, finely chopped
1 tbsp balsamic vinegar
2 tbsp Olive oil

Recipe Directions for Beet Salad with Oranges & Fennel

  1. Roast Beets

  2. Peel Beets and cut into 1/2 in cubes

  3. Cut all peel and pith off oranges. Working over medium bowl to catch juice, cut between membranes to release orange segments. Transfer 2 Teaspoons orange juice to small bowl. Whisk in olive oil. Season with salt and pepper.

  4. Add all ingredients together and toss.
