Recipe Ingredients for beet risotto

0.25 cup Butter
0.5 medium (2-1/2" dia) Onions
4 beets (2" dia, sphere) Beets
1 cup Rice, White, Medium-grain, Cooked
3 cup Soup, Chicken Broth
1 serving Balsamic Vinegar

Recipe Directions for beet risotto

Melt butter. Cook onions and beets in butter until onions are soft, about 8 minutes. Add rice, broth, and vinegar. Simmer about 15 minutes until creamy.
