Recipe Ingredients for Beet Pasta

453 g beets
64 g walnuts
30 g tomato paste
13 2/5 oz whole wheat spaghetti
1 c water
2 T olive oil

Recipe Directions for Beet Pasta

  1. Roast 1 lb beets in oven @ 425 for about 1 hour. Peel and chop when cool.

  2. Pulse beets, walnuts, olive oil, and tomatoes in food processor. Season with salt and red pepper flakes.

  3. Cook pasta according to directions. Drain and reserve 1 cup of pasta water. Return pasta to pot.

  4. Toss with beet mixture, adding pasta water until creamy.

  5. Serve pasta with a dollop of ricotta cheese, a drizzle of oil, and red pepper flakes.
