For how awesome this was I can't believe the health and low calories. Wow! I've decided to lower the serving size to 6 though for some people 8 or 9 would probably be about right. But I need to overestimate ;) I listed it as vegetarian because I don't count Worcestershire as containing animal products ;) Leave it out if you do and replace with teriyaki sauce or something.

Recipe Ingredients for Beet me to the stir fry #1

1 large Onions
1 cup, chopped Carrots
1 stalk Broccoli, Stalks
6 spear (about 5" long) Broccoli
1 large (2-1/4 per lb, approx 3-3/4" long, 3" dia) Peppers, Sweet, Red
1.5 cup Lentils, Sprouted
2 stalk, large (11"-12" long) Celery
4 large (1" to 1-1/4" dia) Radishes
2 cup slices Beets
6 cup Beet Greens
4 tsp Garlic
1/4 cup Golden Raisins
1 tbsp, ground Flaxseed
0.065 cup Wheat Germ, Toasted, Plain
2 tbsp, leaves Basil, Dried
1 tbsp Coriander Seed
1 tbsp Cumin Seed
0.5 cup Vinegar, Cider
2 tbsp Soy Sauce
2 Teaspoon Worcestershire Sauce
1 package Extra Firm
4 tbsp Olive Oil

Recipe Directions for Beet me to the stir fry #1

  1. Drain tofu, squeeze!

  2. Cut into ~5 slices (big rectangles); wrap in cloth and press with something heavy to drain and dry more (I did it twice leaving it sit in the towel for a bit between).

  3. Chop everything into appropriate size and shape for your preference.

  4. Chop tofu into small cubes (or whatever)

  5. Pan to HIGH/Med-high (should be really hot and hotter than you would saute)

  6. Fry tofu in 2 tbsp oil (should go pretty quick) don't much with it too much -- leave it sit on one side for a bit and then try to just flip all the pieces over. Should get browned and crispy. After I got at least two sides nice and brown I just mixed up another couple of minutes.

  7. Remove tofu

  8. Add everything in batches in the order you would like them cooked. The pan is really hot and this will go pretty fast. What goes in first will be the most cooked and last the least so choose by preferred texture. But things like garlic and mushrooms should for sure go later.

  9. Add beet greens last and as soon as they are warm and softened you are done!

  10. Serve over rice and eat!
