Hearty and Healthy autumn stew-- delicious with a spoonful of sour cream, greek yogurt or light cream cheese on top!

Recipe Ingredients for Beet, Leek and Carrot Stew

3 beets
4 leeks
4 carrots
5 strips bacon
1 tsp Broth Mix
6 cups water
4 cloves garlic

Recipe Directions for Beet, Leek and Carrot Stew

  1. Preheat oven to 350║ F. Wrap whole beets in aluminum foil and place directly on oven rack. Slice leeks and carrots into 1/3 inch rounds, place in pan sprayed with Pam and place in oven. Roast for 30 minutes.

  2. Slice bacon into bite-sized strips and dice garlic cloves. Place in pressure cooker or soup pot and sautÚ until it gives off that yummy garlic smell. At this point, dump in the carrots and leeks and stir every now and then.

  3. Unwrap, peel and cube the beets into bite size pieces, dump into pressure cooker or soup pot.

  4. Add water and broth mix and stir until well blended. When the water comes to a boil, place the top on and cook 20 minutes in the pressure cooker or 1 hour in a regular soup pot.

  5. Season to taste and serve!
