2 small onions 1 small potato 1 large zucchini full greens (whole stem and leaf) of about 6 or 7 medium sized beets salt to taste water

1 small (1-3/4" to 2-1/2" dia.)(125 g) Potatoes, Boiled
1 large raw Zucchini
5 cup (1" pieces) Beet Greens
2 small Onions

Recipe Directions for Beet Greens Soup

Cut 2 onions, potato and zucchini into small pieces and let boil. Roughly chop the beet greens and include in the mix. When the greens get soft but not overcooked, blend. Add more water or salt if necessary.
