4 beets
2 tbsp olive oil
1 tbsp red wine vinegar
2 tbsp walnuts, toasted
4 c arugula
2 oz goat cheese, crumbled (1/3 c)

Recipe Directions for Beet & Greens Salad with Goat Cheese

  1. Cut beets into 1/2" cubes.

  2. Whisk together oil, vinegar, nuts, and salt and freshly ground black pepper to taste in large bowl. Add lettuce, gently toss to coat, and put on salad plates. Arrange beets and cheese evenly over the top of each salad.
