Good way to use up Beet greens or Kale

Recipe Ingredients for Beet Greens (or Kale)

4 cups beet greens
1 slice bacon
1/4 cup chopped onion
1 clove garlic
3/4 cup water
1 tbsp granulated sugar
1/4 tsp crushed red pepper flakes
1/6 cup cider vinegar

Recipe Directions for Beet Greens (or Kale)

Wash greens twice, cutting away heavy stems. Cut leaves into bite-sized pieces. In lg skillet cook bacon until crisp. Add onions cooking 5-7 min longer until soft and browning. Add garlic. Add water stirring to loosen particles. Add sugar and red pepper. Bring to a boil. Add beet greens, stirring gently to coat with onion mixture. Reduce heat to low, cover and simmer 5-15 minutes until greens are tender. Add vinegar. (For kale continue cooking additional 20-25 min or until desired tenderness.
