Substitute Beet Greens for spinach, if available.

Recipe Ingredients for Beet & Goat Cheese Penne

8 oz whole wheat pasta
4 oz goat cheese, crumbled
3/4 lb beets
1/4 c whipping cream
1/4 c olive oil
1/4 c walnuts, toasted
10 oz spinach, chopped
2 cloves garlic, thinly sliced

Recipe Directions for Beet & Goat Cheese Penne

  1. Preheat the oven to 400. Wash the beets, wrap in aluminum foil, and place on baking sheet. Bake until tender when poked with a fork (about 40 minutes).

  2. Cook the pasta according to package directions. Drain & set aside.

  3. In a large skillet, heat the oil until it shimmers. Add the garlic, & stir until golden brown. Add the beets, pasta, spinach, goat cheese, and whipping cream. Stir until cheese is melted.

  4. Serve topped with walnuts.
