Recipe Ingredients for Beet and buttermilk soup

1 cup vegetable broth
2 cups water
1/2 pound fresh beets, peeled and diced
1/2 cup diced onion
3/4 cup carrot, diced
1/2 cup celery
4 cloves garlic, minced
1 tablespoon lemon juice
1/2 teaspoon sugar
1/2 cup buttermilk
1 tsp extra virgin olive oil
1/2 tsp unsalted butter

Recipe Directions for Beet and buttermilk soup

  1. Brown carrot, celery and onion on high heat, about 3 minutes. Add beets and cook another few minutes.

  2. Add broth, water, garlic, bay leaf, lemon juice and sugar, and bring up to a simmer.

  3. Cook soup, loosely covered, until beets are tender, about 40 minutes.

  4. Purée until smooth, strain and cool to room temperature. Whisk in buttermilk and season. Stir in dill. Chill at least 4 hours before serving. Check seasoning, as soup may need more salt and pepper. Garnish with sour cream.
