Recipe Ingredients for Beet Borscht

1/2 tbsp. olive oil
2 cups vegetable broth
4 7/10 oz. potato
25 g. green onion
1 clove garlic
6 oz. beets
1 1/2 tsp. raspberry vinegar

Recipe Directions for Beet Borscht

  1. Heat oil in saucepan, add chopped onion and garlic and cook until browned, about 4 minutes.

  2. Add broth, potato, salt (1/4 tsp) & pepper (1/4 tsp). Bring to a boil, then reduce heat to simmer and cook about 8 minutes until potatoes are tender.

  3. Add beets and vinegar, bring to a boil, then reduce heat to simmer until potatoes are very soft, which is about 3 minutes.

  4. Add a slight amount of hot water to bring to 3 cups, then divide into three one-cup servings. Season with sea salt and pepper to taste.
