This is my sister's Ukrainian Mother-in-law's recipe. It is a wonderful summer soup when beets and dill are fresh and so simple to make

Recipe Ingredients for Beet Borscht

2 tbsp olive oil
3 onions
2 celery stalk
2 cups chicken stock
2 tbsp lemon juice
6 cups water
6 beets
6 carrots
1 salt,pepper,dill to taste

Recipe Directions for Beet Borscht

Saute onions and celery until onions are soft and translucent, about 5 minutes. Add the lemon juice and stock and water and simmer for 5 minutes. The lemon juice is important to keep the vibrant color of the beets. Grate the beets and carrots. If the beets have fresh leaves remove the stems and center stem, chop the leaves and set aside. If there are not any leaves you may add any chopped greens you want. Add the beets and carrots and cook about 15 minutes. Add the Beet tops or greens and cook another 5 minutes. Add salt, pepper and dill to taste. Serve with low fat sour cream or better yet yogurt. Enjoy
