Slight adaptation to match ingredient on hand, downsize recipe and substitute roasted chicken breast for ground beef. 4 servings, each 1.5 cups.

Recipe Ingredients for Beet Borscht - adapted from Whgrn's Truly Russian Borscht Recipe

1 tablespoon olive oil
250 grams cabbage
8 ounces beets
35 grams onion
8 ounces tomato
2 4/5 ounces potato
2 1/2 ounces carrots
16 ounces vegetable broth
10 ounces chicken broth
3 4/5 ounces chicken breast

Recipe Directions for Beet Borscht - adapted from Whgrn's Truly Russian Borscht Recipe

  1. Pre-cook boneless, skinless chicken breast.

  2. Slice cabbage thinly

  3. Chop onion

  4. Sautee onion and cabbage in 1 tablespoon oil until soft. Add a few drops of water if needed.

  5. Add tomatoes, sliced beets, carrots, potatoes and broth. Salt to taste.

  6. Simmer one hour.

  7. Slice chicken breast into small chunks and add to soup mixture.

  8. Simmer for another hour.

  9. Makes 6 cups or four servings of 1.5 cups each.
