A variation on a dish a Russian friend often makes, though I used nonfat sour cream and substituted blue potatoes for regular ones.

Recipe Ingredients for Beet & Blue Potato Salad with Dill

8 beets (2" dia, sphere) Beets
2 medium (2-1/4" to 3-1/4" dia.) Potatoes, Boiled
2 medium (3-3/4" long) Pickles, Cucumber, Dill
5 sprigs Dill Weed, Fresh
4 tbsp Nonfat Sour Cream
2 serving Rice Vinegar
1 packet Stevia

Recipe Directions for Beet & Blue Potato Salad with Dill

Boil whole beets (with skins) until just tender. Plunge in cold water and let sit for several minutes, then slough off skin. Dice beets. Peel and dice two blue potatoes; simmer in water until just tender. Plunge in cold water and drain. Combine beets, potatoes, and minced dill pickles in bowl. Mix nonfat sour cream with rice vinegar, stevia sweetner, and minced fresh dill. Add pepper to taste. (I found since the pickles are salty, no added salt was needed, but season to taste.) Pour dressing over vegetables and gently combine. Chill for several hours before serving.
