Recipe Ingredients for Beer Rye Hamburger Buns

4 1/2 teaspoons active dry yeast
1/2 cup warm water
2 1/2 cups beer
1/2 cup shortening
1 cup dark molasses
1 tablespoon salt
1 tablespoon caraway seeds
5 3/4 cups dark rye flour
4 cups white flour
6 tablespoons egg, beaten
1 tablespoon water

Recipe Directions for Beer Rye Hamburger Buns

  1. dissolve yeast in warm water.

  2. Heat beer til bubbly. Remove from heat and add molasses, salt, and caraway seeds. Cool til lukewarm. Add yeast.

  3. Beat in rye flour. Add white flour until dough is no longer sticky. Turn out on floured board and knead until smooth, about 10 minutes. Place into greased bowl and set in warm place to rise until doubled - 1 1/2 hours (45 minutes at 5000 ft.) Can rise twice if desired.

  4. Punch down dough. Shape into rolls or loaves. Slash tops of rolls with knife, baste with egg wash. Let rise again until doubled, 30 minutes.

  5. Brush again with egg wash. Bake in preheated oven at 350 degrees for 40 to 45 minutes.
