Easy to make and either freeze for another date or to make right away.

Recipe Ingredients for Beefy Pasta Casserole

1 1/2 lb ground chuck
1/2 cup yellow onion, diced
1 tsp garlic, minced
1/4 tsp italian seasoning
1/4 tsp pepper (garlic)
1 1/2 cups tomato sauce
16 oz spaghetti
8 tbsp low-fat sour cream (1/2 cup)
1 cup low-fat cottage cheese
2 cups corn
1 tbsp parsley
1 cup shredded cheddar cheese
1 tbsp parsley

Recipe Directions for Beefy Pasta Casserole

  1. Brown ground chuck and add onion to cook, then drain.

  2. While beef is cooking, cook spaghetti and drain.

  3. Mix together beef/onion mixture with garlic, garlic pepper, italian seasoning and tomato sauce. Set aside.

  4. Mix together sour cream, cottage cheese, corn, and parsley. Add cooked spaghetti and mix.

  5. In 9 X 13 pan, layer 1/3 pasta mixture on bottom, 1/2 of beef mixture, 1/3 pasta, other half beef mixture, and remaining pasta on top.

  6. Top with cheddar cheese and parsley.

  7. Bake covered on 375 for 40 minutes til hot and cheese melted.
