Delicious Beefy-Mac type dinner for the low carb/ Keto set. :O)

Recipe Ingredients for Beefy Mockafoni - Linda's Low carb Recipe w/ Beef

16 oz cauliflower
1 1/2 lb ground beef, cooked and drained
7 oz shredded cheddar
4 oz shredded mozzarella
8 oz cream cheese
2 TB Butter
1/4 onion, diced
2 cloves garlic, minced

Recipe Directions for Beefy Mockafoni - Linda's Low carb Recipe w/ Beef

  1. Cook cauliflower in microwave fro 4 minutes until tender. Chop into small pieces if you prefer a finer texture.

  2. Saute beef, drain fat, stir in onions and cook until onions are translucent. Stir in garlic, cook one minute more.

  3. Pour cauliflower and beef into a baking dish.

  4. In same pan, melt the butter on low/med heat, then stir in cream cheese until melted. Add shredded cheese (reserving ~2 oz) and combine until just melted.

  5. Pour cheese sauce over the cauliflower and beef, stir to combine. Top with remainder of the cheese.

  6. Bake at 350 for 35 minutes until top is brown and bubbly.
