Spicy, tasty one-pot dinner that is sure to please. To lower the heat index, substitute regular diced tomatoes in place of the kind listed.

Recipe Ingredients for Beefy Mexican Rice

16 oz Beef, Ground, 85% Lean Meat / 15% Fat, Crumbles
1 1/2 cup Rice
14 1/2 oz Mild Diced Tomatoes and Green Chilies
8 oz Fancy Shredded Colby and Monterey Jack Cheese
1 packet Fiesta Restaurante
16 oz Water

Recipe Directions for Beefy Mexican Rice

  1. Brown ground beef in saucepan, drain any grease.

  2. Add seasoning mix, water, rice and tomatoes and bring to a boil.

  3. Simmer over medium heat until rice is cooked, about 10-15 minutes.

  4. When rice is done, stir in cheese and serve.

  5. May garnish with low-fat or fat-free sour cream, if desired.
