1 egg 1/2 cup crushed whole wheat crackers 1/3 c chopped freash italian parsley 2 tbsp grated parmesan cheese 2 tbsp wheat bran or wheat germ 1/4 tsp salt 1/4 tsp read pepper flakes 2 lb extra lean ground beef

1 medium Egg, Whole
3 serving Soda Crackers (Selection) - 7 crackers
2 tbsp Parmesan, Grated Cheese
1/3 cup Wheat Bran
2 clove Garlic
1 serving Salt
8 serving 90% Lean Ground Beef, Fresh

Recipe Directions for Beefy Meatballs (GI book)

  1. in large bowl, whisk egg with fork. Add crackers, parsley, cheese , wheat barn, garlic, sallt and red pepper flakes and stir to combine. Add meat and combine well, using hands to distribute ingredients evenly.

  2. Roll meat mixture into 1 inch balls (about 2 oz for each ball) and place on aluminum foil-lined baking sheet. Bake in 400 f oven for 20 mins or unitl no longer pink inside.

  3. Makes 6 servings or about 24 meatballs.
