If you want to make something a bit more exotic than your standard winter beef stew, this is it! All the warmth and heartiness you crave, with a spicy Indian palette. PS: There's no added fat!

Recipe Ingredients for Beefy Lentil Curry Stew

1 1/4 lbs stew beef cubes, cut into 1/2" pieces
2 small cooking onions, peeled and chopped
3 stalks celery, cut into 1/2" pieces
1/2 lb carrot chips
1/2 lb sliced mushrooms, baby bella
3/5 lb green pepper, chopped into 1" pieces
2 cups baby spinach, raw
1 lb red lentils, dry
1 oz Frank's RedHot sauce
1 tbsp Worcestershire sauce
6 cups water
1 tbsp curry powder
1 tsp cumin
1 tsp chili powder, spicy
1 tsp black pepper
1 tbsp dried basil
1/2 tsp dried dill
1 tsp dried marjoram
1/2 tsp ground cinnamon
1/4 tsp caraway seeds

Recipe Directions for Beefy Lentil Curry Stew

  1. Put a large nonstick stew pot on medium-high heat.

  2. Place the beef in the bottom of the pot.

  3. While the beef is cooking, chop the vegetables. Add the onion, celery, carrots, pepper, mushrooms, and spinach, in that order.

  4. Add 2 cups of the water to the pot. Reduce heat to low.

  5. Pour lentils over the pot. Add remaining water.

  6. Sprinkle herbs, spices, and condiments over the top of the lentils.

  7. Stir everything together, making sure to pull meat from the bottom of the pot.

  8. Cover completely and let simmer on low heat for 1 to 1 1/2 hours.

  9. Stew is ready when lentils have absorbed much of the liquid and the carrots are tender.

  10. Serve with pita bread and hummus.
