Yummy side dish for Eric's Crockpot Ribs

Recipe Ingredients for Beefed-up Quinoa & Barley

1/2 cup Barley
1/2 cup Quinoa
2 cups low sodium Beef Broth
4 cups Water
2 cups Mushrooms
1/2 cup Onion
1 tsp Rosemary
1 tsp Pepper
2 tbs Garlic, minced
1 tbs Olive Oil

Recipe Directions for Beefed-up Quinoa & Barley

  1. Sautee Mushrooms, onions, Garlic, Oil, and spices until everything is just cooked through.

  2. In two separate pots cook each:

  3. Barley w/ 2 Cups Reduced Sodium Beef Broth, and 1 Cup water. Bring water to a boil, toss in Barley, simmer on low for 1 hour +++ (helps if you soak it overnight first in water)

  4. Quinoa w/ 3 cups water. Bring water to a boil, toss in Quinoa, simmer on low for 20 minutes.

  5. Toss the barley, and the quinoa, and the sautee together, heat through.

  6. Bon Apetit`!
