Recipe Ingredients for Beef, Zucchini & Tomato Casserole

2 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
2 medium Squash, Summer, Zucchini, Includes Skin
454 grams Lean Ground Beef
1 large Onions
2 clove Garlic
1 cup Pasta Sauce
300 grams Cottage Cheese, Lowfat, 2% Milkfat
1 large Egg, White
1 tsp Spices Oregano Leaves
0.5 tsp Salt, Table
0.5 tsp Pepper, Black
60 grams Cheddar Shredded Cheese

Recipe Directions for Beef, Zucchini & Tomato Casserole

  1. Preheat oven to 500 F. Coat baking tray with cooking spray. Lay sliced tomatoes and zucchini on tray and roast for 12 minutes.

  2. In a large saucepan, saute beef, onion and garlic until browned. Stir in tomato sauce and bring to a simmer. Spread beef mixture on bottom of large shallow baking dish. Top with roasted vegetables. Reduce oven temp to 350F. Whisk together, cottage cheese, egg, cheddar cheese and herbs and spices. Spoon over roasted vegetables and smooth with spatula. Bake for 35 minutes. Cut into 4 equal pieces.
