Recipe Ingredients for Beef and Zucchini Soup

1 lb of lean beef
2 Zucchini
2 Yellow Squash
1 Yellow Onion
3 cups of Brown rice
6 cups of Water

Recipe Directions for Beef and Zucchini Soup

  1. Bring 3 cups of water to a boil in a large pot and season with salt and pepper.

  2. While the Water is boiling, Cut all the vegetables to a desired size and place the zucchini and squash in the water.

  3. Cut beef into pieces and brown a pan with onion until onion is partially carmelized. Then place all contents in the water with vegetables.

  4. Cook until vegetables are soft and mushy. Serve over cooked brown rice.
