Beef and Zucchini Cheesy Bake Recipe

Layers of beef ragu, zucchini strips and cottage cheese. Low calorie but delicious alternative to lasagne. A terrific family meal or meal to serve guests.

Recipe Ingredients for Beef and zucchini cheesy bake

1 kg extra lean ground beef
1 medium onion
3 cloves garlic
200 grams carrots
150 grams celery
1 cup tomato paste
2 tbsp worcestershire sauce
1/2 tbsp rosemary
300 grams zucchini
500 grams fat free cottage cheese
1 tsp salt
1 1/4 cup water
1 egg white
1/2 tbsp olive oil

Recipe Directions for Beef and zucchini cheesy bake

  1. Finely chop onions and garlic.

  2. Heat oil in large pan and cook onions and garlic for 5 minutes.

  3. Add beef and cook until brown.

  4. Finely chop carrots and celery and add to beef.

  5. Add tomato paste, 0.5 tsp salt, rosemary and 1 cup of water to beef mixture, cover and simmer over low heat for 30 minutes, stirring occasionally.

  6. Preheat oven to 180C.

  7. Add remaining salt (0.5 tsp), worstershire sauce (1 tbsp) and water (0.25 cup) to cottage cheese and blend until smooth.

  8. Finely slice zucchinis lengthwise.

  9. Add a thin layer of liquid from meat mixture to the base of a large lasagne dish (or 2 smaller dishes).

  10. Line the base of the dish with zucchini strips.

  11. Cover the zucchini with half the meat mixture.

  12. Cover the meat layer with remaining zucchini strips and layer with remaining meat.

  13. Top meat with cottage cheese mixture and smooth top.

  14. Brush top of "pie" with egg white.

  15. Bake in oven for 40 minutes.

  16. Let stand 10 minutes before serving.

  17. Freezes well.
