A hearty and low fat beef stew with lots of great vegetables

Recipe Ingredients for Beef and Veggie Stew

4 oz Beef, Top Sirloin
1 tbsp Olive Oil
0.5 oz Flour
1 cup (8 fl oz) Water
2 small (1-3/4" to 2-1/2" dia.) Potatoes, Boiled
2 carrot (7-1/2") Carrots
0.5 small Onions
0.5 medium raw Bell Pepper Red
0.5 cup Leeks, (Bulb And Lower Leaf-portion)
0.5 cup Chickpeas (Garbanzo Beans, Bengal Gram), Mature Seeds
0.33 cup, chopped or sliced Tomatoes, Red, Ripe
0.5 cup, pieces or slices Mushrooms
1 full glass (6.0 fl oz) Wine, Table, Red
1 oz Oregano
3 clove Garlic
1 medium slices, cooked (raw product packed 20/lb) Pork, Cured, Bacon
1 tbsp Corn Starch

Recipe Directions for Beef and Veggie Stew

  1. Cut beef into 1cm cubes. In a heavy skillet, sauté beef in one tbsp of olive oil until browned. Mince garlic and add near end of browning process so as not to scorch. Add one tbsp of flower and brown slightly mixing thoroughly with the remaining oil. Add one cup of water and the oregano. Bring to a boil for fifteen minutes or until the meet starts to become tender.

  2. Cut carrots and potatoes into 1cm cubes and add to the boiling water along with three slices of raw bacon. Make sure that there is enough liquid to slightly cover the ingredients. If liquid is insufficient, add some of the wine (burgundy is best) now. Cook another 10 minutes.

  3. Roughly cut onion and bell pepper and add to mixture with chickpeas. Boil for another 5 minutes.

  4. Roughly chop the leeks and tomatoes and add to the mixture along with the remaining wine. Boil another five minutes.

  5. Roughly chop mushrooms and add to stew. Add corn starch to thicken to desired consistency. Season with Salt and Pepper to taste.
