broth based soup with some meat and plenty of veggies..........good for maintaing calorie restrictions and nutrition requirements.

Recipe Ingredients for Beef / veggie soup

4 oz hamburger
2 cups chopped potatoes
1 cup chopped onion
8 oz corn
8 oz green beans
8 oz tomatoes
1 chopped bell pepper
1 tspn salt
1 tspn black pepper
1 cup chopped carrot
3 quarts water

Recipe Directions for Beef / veggie soup

  1. brown meat, drain if necessary.

  2. chop vegetables if needed.

  3. add all ingredients to meat.

  4. add water, bringing to boil.

  5. reduce to a simmer and simmer until all veggies are tender.

  6. add water if needed to maintain level of broth.
