Recipe Ingredients for beef and veggie chili

1 lb lean ground beef
1/2 onion
1 tbs olive oil
1 cup mushrooms
1 red pepper, chopped
1 med. eggplant, chopped
14 oz. diced tomatoes
1 cup water
2 cups kidney beans
1/2 tsp salt
1 tbs chili powder
2 tsp cumin
1/4 tsp red pepper

Recipe Directions for beef and veggie chili

place olive oil in dutch oven. saute onion and beef. add remaining ingrediats. bring to boil over med. heat. Reduce and simmer 30 min.
