A lovely tasty stew for cold evenings

Recipe Ingredients for Beef & Vegetable Stew/Soup

400 grams chopped tomatoes
100 grams celery
100 grams parsley
100 grams carrots
100 grams leeks
700 grams lean beef
1 1/2 cups brown rice
2 tsp stock
1 tsp olive oil

Recipe Directions for Beef & Vegetable Stew/Soup

  1. brown the meat in the olive oil

  2. add the tomatoes

  3. chop all the veggies or add the soup veggie pack

  4. add 1 litre of water (or as much as you need)

  5. add the stock cubes

  6. leave to simmer for 40 mins to an hour

  7. add the rice and perhaps more water if needed

  8. simmer for a further 20 minutes

  9. serve
