I made this up from things I found in my gramma's pantry to give her a night off, and I managed to hide some vegetables in there!

Recipe Ingredients for Beef and Vegetable Chili Stew

1 lb 85% lean ground beef
1 small red onion
1 1/2 cups shredded carrots
1 small red bell pepper
2 cups cauliflower
15 oz navy beans
15 oz pinto beans
12 oz diced tomatoes
1 tbsp sugar
2 tbsp cumin
2 tbsp chili powder
1 tbsp garlic powder
1 tbsp paprika

Recipe Directions for Beef and Vegetable Chili Stew

  1. Chop onions, bell pepper and carrots (if needed.) Cook in a little bit of olive oil until soft. Pour in about 1/2 cup of water, let boil, and add cauliflower. (I estimated at 2 cups).

  2. Pour in all seasonings. Add the tomatoes, wait until heated through, then add the ground beef.

  3. After beef is cooked, add the beans and a little more water if necessary. Adjust seasonings to taste. Add 2 tsp hickory smoke flavoring if desired. Add salt to taste.

  4. Let simmer for half an hour to an hour, longer if desired. Enjoy!
