Beef Tenderloin Salad with Horseradish dressing

Recipe Ingredients for Beef Tenderloin Salad with Horseradish dressing

8 oz beef tenderloin
2/3 lb red potatoes, roasted
2 tomatoes, medium, roasted
3 tbsp light sour cream
2 tbsp raw horseradish, grated
1/2 lb sugar snap peas
3 cups mixed greens
1 tbsp olive oil

Recipe Directions for Beef Tenderloin Salad with Horseradish dressing

  1. Marinade the beef with a little Worcestershire sauce, and salt or pepper, if desired.

  2. Quarter the baby red potatoes and boil for 15 minutes.

  3. Place potatoes on a baking sheet, and drizzle with small amount of olive oil. Salt and/or pepper if desired. Roast for 15 minutes.

  4. Add tomatoes to roasting pan, drizzle with small amount of olive oil (may use cherry tomatoes or smallish regular tomatoes). Roast tomatoes and potatoes for additional 15 minutes.

  5. Meanwhile, blanche sugar snaps.

  6. Mix horseradish and sour cream for sauce, set aside.

  7. Cook beef, either by searing in hot frypan, or grill. (no need for oil in the frypan)

  8. Lay mixed greens down on plate. Top with beef. Arrange roasted potatoes and tomatoes around plate. Top with dressing.
