Beef Tenderloin with mushroom sauce

Recipe Ingredients for Beef Tenderloin with mushroom sauce

1 c beef stock, low sodium
1/2 c red wine
4 tsp flour
16 oz beef
1/4 tsp pepper
2 tsp olive oil
4 tbsp shallots
8 mushrooms
1/8 tsp thyme

Recipe Directions for Beef Tenderloin with mushroom sauce

  1. ** use low sodium beef stock

  2. **use 4 - 4 oz beef tenderloin steaks

  3. Combine first 3 ingredients in a bowl and set aside.

  4. Season steaks with salt and pepper. Heat 1 tsp oil in heavy skillet. Cook steaks over medium-high heat to desired doneness. Remove steaks and set aside.

  5. Add remaining oil and shallots and cook, scraping to loosen crusted mean particles. Add mushrooms.

  6. Whisk stock mixture and thyme into the skillet. Cook, stirring, tu sauce consistency. Add accumulated juices from the standing steaks.
