Recipe Ingredients for Beef Tenderloin with Mushroom Gravy

16 ounces filet mignon
1/2 tsp pepper
1/4 tsp salt
1 cup mushrooms
1/2 cup onions
1 tsp garlic, minced
1/2 cup low sodium chicken broth
1/3 cup light sour cream
2 tablespoons parsley, chopped

Recipe Directions for Beef Tenderloin with Mushroom Gravy

  1. Heat large skillet coated with cooking spray over medium high heat. Sprinkle steaks with salt and pepper. Add steaks to pan; cook 3 minutes per side or until desired degree of doneness. Remove from pan.

  2. Add mushrooms, onion, and garlic to pan. Saute 5 minutes. Stir in broth; bring to boil. Cover, reduce heat and simmer 3 minutes.

  3. Place sour cream in a medium bowl. Gradually add mushroom mixture to sour cream, stirring constantly with a whisk. Stir in minced parsley. Serve gravy with steak
