From Cooking Light; spicy beef with cubed butternut squash. (The recipe calls for 3 cups cubed butternut squash--It takes a large butternut squash--but the recipe analyzer did not allow me to put "3 cups" in--yet one squash counted as one cup. You don't really need 3 squash.) The Tagine is good served with Scallion Couscous.

Recipe Ingredients for Beef Tagine with Butternut Squash

2 tsp paprika
1 tsp ground cinnamon
1/2 tsp ground ginger
1/2 tsp crushed red pepper
1/2 tsp black pepper
1 lb. beef roast (shoulder), trimmed and cubed
1 tablespoon olive oil
4 small onions
4 garlic cloves
1/2 cup water
14 1/2 oz. diced tomatoes
3 winter squash, butternut, peeled & cubed

Recipe Directions for Beef Tagine with Butternut Squash

  1. Combine first five ingredients in a medium bowl. Cut trimmed beef into one-inch cubes. Put the beef in the bowl and stir until cubes are well coated. Heat oil in a large Dutch oven over medium heat. Add beef and shallots (or onions) that are quartered. Stir occasionally until beef is brown. Add garlic; cook 1 minute, stirring frequently. Stir in water (can use broth) and tomatoes. Cook 5 minutes. Add squash; cover, reduce heat, an simmer for 15 minutes or until squash is tender.

  2. Serve with couscous or rice.
