Mild beef tacos in soft corn shells -- a great use-up for leftover flank steak or london broil.

Recipe Ingredients for Beef Tacos

6 oz. lean beef
1/2 onion, thinly sliced
1 bell pepper, thinly sliced
1 tbl olive oil
1 clove garlic, minced
1 tsp chili powder
1/2 tsp cumin
2 oz. shredded 2% cheese
2 oz. light sour cream
1/2 cup salsa
6 corn tortillas

Recipe Directions for Beef Tacos

  1. Preparation Instructions:

  2. Heat oil in skillet over medium high heat. Add garlic; saute until fragrant. Add peppers and onions; cook until somewhat soft. Add chili powder and cumin; cook for another minute. Add sliced beef and cook thoroughly. Heat tortillas in microwave and top with beef/pepper/onion mixture, and remaining ingredients as listed. Yields 3 generous tacos per serving.
