Recipe Ingredients for Beef Taco Salad with Chunky Tomato Dressing

3/4 lb. 90% lean ground beef
15 1/2 ounce can black beans
2 cloves garlic
1/3 cup water
1 tablespoon chili powder
1/8 teaspoon cayenne pepper
4 tomatoes
2 tablespoons extra virgin olive oil
2 tablespoons lime juice
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
6 cups of romaine lettuce
1/2 cup reduced fat cheddar cheese

Recipe Directions for Beef Taco Salad with Chunky Tomato Dressing

  1. Heat a large skillet over medium-high heat. Add the beef and cook until no longer pink, breaking up the meat with a spoon.

  2. Add the beans and garlic and cook for 2 minutes more.

  3. Add the water, chili powder, and cayenne and stir until well combined.

  4. Remove from the heat and allow the mixture to cool slightly.

  5. In a medium bowl, combine the tomatoes (with their juices), oil, lime juice, salt and pepper.

  6. The dressing and meat mixture may be prepared up to 2 days ahead and stores in airtight containers in the refridgerator.

  7. To serve, place 2 cups of lettuce on each plate or in lunch containers. Top each serving with 1 cup of the beef mixture, then sprinkle with 2 tablespoons of cheese.

  8. Top each salad with 2 tablespoons of dressing and add crushed tortillas (optional).
